Pesto is just so simple to make, I almost always forget myself how quickly it comes together. The only thing you need to remember is that you probably need more fresh herbs than you think… all the fresh basil and just a few other staples and you can whip up a delicious pesto in minutes for mingling with your pasta or spaghetti.
Preparation Time - 10 minutes
Cooking Time - 10 minutes
Servings - 4
For the Pesto:
50g fresh basil
60g Lifeforce almond butter
120ml olive oil
2 cloves of garlic grated or finely chopped
2 tbsp apple cider vinegar
½ tsp salt, or to taste
300g uncooked pasta or spaghetti
1 mug of frozen peas
4 tbsp grated Parmesan
4 tbsp roasted / toasted whole almonds
Put pasta on to cook according to packet instructions.
Blitz together all pesto ingredients in a blender. We like our pesto nice and smooth but you can keep it a little more rustic and chunky if desired.
Once the pasta is almost cooked, add peas to the pot for the final 3 or so minutes of cooking.
Drain peas and pasta, stir through pesto and serve topped with almonds and Parmesan.
Season with a little black pepper if desired.
