No Bake Peanut Butter Fudge Bars

Ingredients

Peanut butter and chocolate, is there a better combination? Some people might argue the case for peanut butter and jelly/jam, but chocolate wins every time for us!
We used our crunchy Peanut butter in these simple no bake fudgy bars. A great little snack any time of the day!

Preparation Time - 20 minutes
Servings - 8 bars or 16 bites

For the base
240g Lifeforce crunchy peanut butter
60g Lifeforce coconut oil, melted
100g honey
250g oats

For the topping
140g dark chocolate roughly chopped or broken
2 tbsp Lifeforce coconut
2 tbsp peanuts chopped

Method

Line an 8 inch square tin with baking paper and lightly grease with coconut oil.
Mix together peanut butter, honey and coconut oil in a large bowl.
Place oats into a food processor or blender and blend until they are flour consistency; it doesn’t need to be super fine.
Add oat flour to the peanut butter mixture and mix well to form a dough.
Place your dough into your prepared tin and spread evenly using your fingertips or the back of a spoon.
Melt chocolate in the microwave using 30 second increments. After the first minute add the coconut oil and return for 30 seconds - 1 minute more; it should be melted at this stage!
Pour over the base reserving a few tablespoons of dark chocolate for drizzling once the initial layer has almost set.
Place into the fridge to set for 15 minutes. Drizzle with remaining chocolate and sprinkle with chopped peanuts if using. Return to the fridge to set for 2 hours or overnight before slicing into 8 large bars or 16 square bites. Store in the fridge in a sealed container for up to 1 week or freeze for up to one month.
