Chocolate and peanut butter is just a match made in heaven. These cookies are a cinch to make, taste delicious and look super cute. A light peanut butter chocolate cookie with a creamy sweet peanut butter filling. Peanut butter perfection!
Preparation Time - 15 minutes
Cooking Time - 10 minutes
Servings - 16 - 20 mini sandwich cookies
For the Cookies
240g smooth Lifeforce peanut butter
140g white spelt flour
30g cocoa powder
2 tbsp milled flaxseed tsp milled flaxseed
100ml milk or water
Generous pinch of salt
For the Filling
80g smooth Lifeforce peanut butter
25g Lifeforce coconut oil melted
Preheat your oven to 180C (350F).
Mix together all cookie ingredients in a bowl.
Roll dough out between two pieces of parchment paper so that it is only about ¼ of an inch thick.
Use a mini cutter to cut 20 - 24 cookies; reforming and rolling the dough when necessary.
Place cookies on a baking tray lined with baking paper.
Bake cookies in the preheated oven for 10 minutes. Carefully flip each cookie over and cook for a further 5 minutes. Allow to cool on the tray.
Mix together filling ingredients and place into the fridge for a couple of hours. This can be done in advance of making the cookies.
Once the cookies are cool, sandwich them together with approximately 1 tsp of the filling.
Store in the fridge for up to one week.
